Carve Your Way To Delicious Pumpkin Bread

I’m not much of a kitchen maven, in fact I run in the opposite direction, but there is something about fall that makes me wants to get all bake-y and stuff. The smells and the colors are comforting and I like that — a lot! I have been asking friends and fellow bloggers for their best fall recipes for inspiration.

This week I wanted pumpkin specific recipes because we will be carving soon and I wanted to know what to do with the gooey insides. Thanks to new mama and blogger Kaitlyn of Naturally Chic Life I got a delicious recipe which lets me do just that — carve my way to pumpkin bread.

  • Carve Your Way To Delicious Pumpkin Bread

    What you need:
    15 ounce pumpkin puree (equivalent of 1 can)
    4 eggs
    1 cup vegetable oil
    2/3 cup water
    2 teaspoons pure vanilla extract
    2 1/2 cups sugar
    3 1/2 cups all-purpose flour
    2 teaspoons baking soda
    1 1/2 teaspoons kosher salt
    2 tablespoons pumpkin pie spice

    Take the family to your local patch, enjoy a day out and pick the perfect pumpkin (or pumpkins!)

    Makes: 2 loaves
    Prep Time: 20 minutes
    Cook Time: 60 minutes

    As you are carving the pumpkins, take the pieces and steam them to soften up. If you don’t have enough pieces, you can add canned pumpkin.

    While the pumpkin pieces steam, pre-heat the oven to 350 F and have gooey fun with the kids —and don’t forget to save a few seeds for baking!

    Once the pieces are soft enough, mash with a fork or quickly puree in a blender.

  • Mix it up!

    Grease and flour two 8.5 x 4 x 2.5 inch loaf pans.

    In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine pumpkin, eggs, oil, water, vanilla and sugar until well blended.

    In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until well combined.

    Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the prepared pans.

    Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
