    After a rousing afternoon, Larry and I enjoy a sumptuous rustic pasta dinner with local ingredients while Judah, clearly tuckered from all the excitement, takes a well-deserved nap.

We managed to make an entire meal from everything we bought at the farmers’ market that evening, for less than thirty dollars. We bought fresh spinach linguine from Valicenti Organico, a delicious sourdough loaf from Pain D’Avignon, all of our veggies from Long Hill Orchard and Farm and delicious grass-fed beef from Salem’s own Milk & Honey Green Grocer.

Rustic Farmers’ Market Pasta Recipe
Try to source as many items as you can from local vendors at your own community farmers’ markets!



  • 1 lb fresh pasta
  • 1 lb grass-fed, organic beef
  • 1 loaf sourdough bread, sliced
  • 1 bunch fresh parsley
  • 3-4 large spring onions
  • 3-4 large greenhouse or heirloom tomatoes
  • 1 cup tomato sauce (if needed)
  • 3 Tbsp extra virgin olive oil
  • Kosher salt and cracked pepper to taste


  1. Get a large pot of salted water boiling for your pasta. While waiting for water to boil, finely chop your onions and coarsely chop parsley.
  2. In a large saucepan, heat 2 Tbsp olive oil and sauté your chopped onions at medium high heat. When the onions have just begun to sweat, add in your ground beef.
  3. When beef is nearly done, add in your chopped parsley and allow to wilt, stirring occasionally.
  4. Crush tomatoes by hand and add to beef and onions; you may chop them into large chunks if it’s easier first. Stir. If you want a slightly denser sauce, add up to 1 cup of tomato sauce. Add salt and pepper to taste. Reduce heat to medium low and let simmer for 2-3 minutes.
  5. Toast a few slices of sourdough bread as you add the fresh pasta to the boiling water.
  6. Boil pasta for 5 minutes maximum; using tongs, transfer pasta from boiling water to your saucepan and gently stir the pasta into the sauce, allowing the pasta to finish cooking in the sauce.
  7. Take out sourdough toast and lightly brush slices with the remaining tablespoon of olive oil. Lightly sprinkle some salt on each slice.
  8. Serve immediately and enjoy. Makes four generous servings.
