Summer is here ya’ll! With temperatures breaking the 100-degree barrier this week across the country, I think it is safe to say that the season of sunshine and popsicles is upon us! This is a recipe I made last summer that was a huge hit in our house. It’s mostly fruit, but you’d never know by just tasting it. So feel good about letting the littles enjoy these chocolate-y treats, they’re actually eating bananas!
This recipe is pretty much a popsicle version of the banana ice cream recipe that has been making its rounds on the blogs and Pinterest, except that for these, you add coconut milk and take out the peanut butter. (Although you could leave the peanut butter if you want!) They are so good, and perfect for cooling off in this crazy summer heat. Plus, with mostly fruit inside, you can feel good about letting kiddos enjoy them!
– 6 tbsp cocoa powder
– 1 can (roughly 1 1/2-1 3/4 cups) light coconut milk
– 3 ripe, frozen bananas
– 1 1/2 tsp vanilla extract
– sprinkling of stevia/sugar to taste (if your bananas were really ripe you won’t need the sugar)
Puree in a blender until completely smooth, pour into popsicle molds and freeze. ENJOY!
