A Healthier First Birthday Party Treat: Vanilla Coconut Cupcakes

With my sweet Fern’s 1st birthday coming up in just two weeks, I’ve been busily trying to figure out what to do in celebration. But, one thing I am feeling absolutely zero stress over? Finding a recipe for her birthday cake. We haven’t done any sweets for Fern as of yet and she’s never really had any type of baked good aside from bread…not even a muffin, so I didn’t want to go too crazy with the sweetness. Lucky for me the super sweet Naomi of the blog Kitchen Party offered to whip up a recipe for Fern’s birthday that would fit the bill quite nicely and I thought I’d share it with you!

Healthier Vanilla Coconut Cupcakes For Baby's First Birthday

Vanilla Coconut Cupcakes:


1 1/3 cups flour

1 tsp baking powder

1 tsp aluminum free baking soda

1/4 tsp salt

1/2 cup organic plain yogurt


1/2 cup organic coconut milk

1/2 cup butter, melted

3/4 cup muscovado sugar

2 eggs

1 tsp vanilla


1. Preheat oven to 350 degrees.

2. In a medium sized bowl, combine flour, baking powder, baking soda and salt. Set aside.

3. In a small bowl, combine the yogurt and coconut milk. Set aside.

4. melt the butter over medium heat. Add the melted butter to the muscovado sugar and mix well.

5. Add the eggs one at a time, mixing well. Add the vanilla.

6. On low speed in your mixer, alternate adding the flour and the yogurt mixture, beginning and ending with the flour. Don’t over mix.

7. Fill your muffin cups 3/4 full – you can use an ice cream scoop to make things easier.

8. Cook your cupcakes for 22 minutes or until a toothpick comes out clean.

Whipping Cream Icing:


1 cup whipping cream

1 tsp vanilla

1 tsp coconut extract

4 tbsp muscovado sugar


Add all the ingredients in a chilled bowl. Beat until it is nice and thick. Garnish with some unsweetened toasted coconut if you desire.

Coconut Icing:


1/2 cup coconut milk

1/2 cup softened butter

3 cups icing sugar

1 tsp vanilla


Beat all the ingredients together until it is nice and smooth. You can add extra coconut milk or icing sugar to get the consistency you want. Garnish with some toasted unsweetened coconut if desired.
