Now that I’m a mama to four, I feel like everything I do has to be quick and efficient so that everything stays under control. Breakfast has been where I’ve really been focusing my efforts. It has always been my favorite meal of the day, and I know it’s the most important for my family. I always strive to give them something that’s healthy, tastes good, and doesn’t require a lot of work to bring to the table. Once I discovered the ever-popular overnight oatmeal, I knew I found the perfect morning meal!
I love being able to quickly assemble the ingredients into individual containers that could be customized to suit each person’s specific tastes. The recipe is so easy and very versatile. Feel free to top with as many add-ons or mix-ins that you enjoy. This was the first time I’ve used chia seeds, and I am truly hooked! They give the oatmeal the thick and creamy texture that is so satisfying. And I love that it adds fiber and protein.
Overnight Chia Seed Oatmeal
- 1/2 cup Old-Fashioned Oats
- 2/3 cup milk (I used whole, but feel free to use what you prefer)
- 1/2 cup vanilla yogurt (or use plain, and sweeten to your liking)
- 1 tablespoon chia seeds
Combine everything in a container, mix well, and cover with a leak-proof lid. In the morning, top with your favorite toppings, and enjoy!
