The Perfect Iced Treat For Mom: Chai Tea Popsicles!

Summer for me means only one thing:

Ice cream, and lots of it.

Almost every night after dinner, I raise my eyebrows hopefully at my husband. And he shakes his head adamantly.

“No, Chaunie, we can’t go for ice cream every night.”

I know he’s right of course, as much as it pains both of us to admit it. So I’ve had to come up with a different sort of sweet, iced treat to keep my cravings satisfied without causing a sugar overload to me and my baby!

I had read about making homemade chai tea (my favorite!) popsicles a few days ago on Pinterest, but being the lazy mom that I am, I didn’t want to bother with the hassle of boiling sweetened milk, stirring in a liquid sweetener, or adding spices. So I improvised a bit, and came up with my own version!

Homemade Chai Tea Popsicles

Ingredients:

*4 bags of chai tea (I’m preggo, so I used decaf)
*3 cups of regular or sweetened almond milk
*Drizzle of honey to taste

Directions:

Warm your almond milk in the microwave or on the stovetop. I heated mine for two minutes in the microwave so it was hot, but not boiling. Seep your tea bags for 7-10 minutes, or however strong you would like your popsicles to be. Remove the tea bags and stir in the honey to sweeten your popsicles to your liking. Pour in popsicles molds, freeze, and enjoy! Serves four.

The best part about my popsicles is that of course, my kids wanted to try them, and because I used decaf tea, we were all able to enjoy them together. They were just sweet enough and refreshing for those hot summer afternoons.
