Summer is officially coming to a close, and this weekend families everywhere will be out enjoying the last few days before heading full force into fall. Labor Day Weekend is always a great time to picnic, cook out and eat yummy food!
Kristen, friend, foodie and owner of Momme Meals came up with the perfect end of summer salsa for adults and the kiddies to enjoy. Chock full of veggies and nutrients, it’s easy to make and even more delicious to eat! By taking out the “heat” it instantly becomes a treat for babies and toddlers.
Whether you need a quick snack in the afternoon or you’re headed to an event and need to bring a dish, this salsa is sure to be crowd favorite. It will have your family and friends asking for MORE PLEASE!

What you need
1 cup cherry tomatoes chopped
1 ear or ¾ cups of sweet summer corn
½ lime juiced
2 teaspoons olive oil
¼ teaspoon sea salt
1 small or ½ large jalapeno
½ cup chopped red onion
1 cup chopped strawberries
½ cup cilantro
¼ cup of black beans (make fresh or use prepared options with no added sodium)
½ avocado chopped
*Tip: Use the same size cut for all of the ingredients. Whether you go a small or medium (prefer small), being consistent will your cut will help make this great dish even better.
Remove the corn from the cob and cut the tomatoes, avocado and strawberries. Place them in a bowl with the black beans.
For baby: If you have a little one at home, mash the remaining avocado half with a banana for a quick baby meal. If your baby is over 8 months, include some beans to the mix. Over 10 months and you can share it all, strawberries and tomatoes included. Place cilantro, lime juice, olive oil, salt in a small food processor.
Blend and scrape down the sides of the processor in between blends.
For toddler: At this point your salsa seasoning is ready for your toddler to enjoy. Take a small portion of the cilantro mix and set it aside with some the cut ingredients for a snack they can munch on throughout the day.
Next, add the jalapeño to the cilantro mix and blend until no large pieces remain.
Add the cilantro/jalapeño mix to the cut ingredients. Use a large spoon to ensure all of the ingredients are fully coated with your mixture.
Time to eat!
Let sit for 10 minutes before serving. Then ENJOY! Serve with tortilla chips, pita bread or as a side dish at your BBQ.
It’s a recipe for the entire family to enjoy and if there are leftovers (doubtful) it will keep well for two days in your refrigerator.
