I can’t resist a good smoothie. I’m always experimenting with recipes — and by recipes I mean just throwing in a bunch of stuff in the blender and seeing what works and what doesn’t. I have a hard time getting my 5 fruits and veggies a day so this is a great way to get that in. Also, having a nutritious smoothie keeps me from eating junk and helps me make better choices.
My friend Kristen of MommeMeals is always sending me new recipes to try. She knows I”m a super busy mama and that I am trying to stay on the healthy eating track. Being that we still have another month of pumpkin recipes, she sent this unusual yet delicious recipe to try. And wow….it’s GOOD!
Here’s what you need to make this cranberry, avocado and pumpkin smoothie that is both refreshing and filling:
- 1 cup almond milk
- ½ cup roasted pumpkin (BPA-free canned pumpkin can be substituted)
- ½ cup frozen cranberries
- ¼ fresh avocado
- 1 tablespoon maple syrup
- 1 tablespoon chia (optional)
- ½ teaspoon cinnamon
- 2 ice cubes
- 1 pinch of sea salt
Combine all ingredients in a high powered blender.
Blend until smooth.
Top with a sprinkle of cinnamon or a cinnamon stick for an added kick.
